Teams draw a cut and a fire, then cook against the clock beside a working pitmaster or asador — smoke rings judged, sauces defended, a champion crowned. Pits, wood, proteins, sides, and a blind-tasting panel are all handled; the group just cooks and eats. One invoice, aprons stocked, and enough over-the-fire theater to carry the whole afternoon.
